Ingredients: 

125 ml plain Gero yogurt
15 ml chopped gherkins
10 ml Worcester sauce
20 ml finely chopped celery
2 spring onions, chopped finely

50 - 60 MINUTES

DIRECTIONS

Combine ingredients in food processor and pulse until mixed. Heat oil in pan and gently fry garlic, onion, aubergine and diced pepper for 5 minutes. Stir in the quinoa, salt, pepper and parsley and leave to cool before stirring in the mint and feta. Store in refrigerator. Serve with salads, potatoes, tuna or chicken.
